Super Easy Asian Stir Fry

Asian stir fry is one of my favorite things to make for dinner because it can never get old. You can always switch it up with a different protein, different vegetables, or a mix of seasons and have a completely different meal than the time before. Stir fry is also very easy to throw together on a week night when you get home and don't have a ton of time to cook. Check out the recipe below for my last mix on Asian stir fry!

2 tablespoons of low sodium soy sauce
½ teaspoon of powdered ginger
¼ of garlic powder
2 tablespoons of sesame seeds 
2-3 chicken breasts, chopped into bite size cubes
2 broccoli crowns
1 red pepper
½ cup low sodium chicken broth

1. Combine the first 3 ingredients in a large Ziploc bag
2. Add chicken and shake the mixture to coat the chicken.
3. Marinade the chicken in the refrigerator for 30 minutes.
4. Chop the broccoli crowns and red pepper into bite size pieces.
5. Coat a large skillet with cooking spray or olive oil.
6. Saute the vegetables for 7-8 minutes and remove them from the skillet.
7. Add the marinated chicken to the skillet and cook for 6-7 minutes.
8. Add the vegetables back into the skillet along with the chicken broth.
9. Cook all together for about 2 minutes or until the broth is absorbed.
10. Serve with white or brown rice.
