Foodie Files: Sheet Pan Chicken Fajitas

I've shown y'all one of my favorite sheet pan dinners before here, but I truly think this latest creation takes the cake! Sheet pan dinner are super low maintenance, which makes them perfect for week nights when you get home from school and work. As opposed to having to think of something to have for dinner each night, you can simply whip this up on Sunday and it will last you throughout the week. Mexican is a crowd favorite so sheet pan fajitas are a great idea because you can mix and match with protein, veggies, and sides to meet your personal preferences. Check out the recipe below for details! 

1 package of chicken breast tenderloins
1 green bell pepper
1 yellow bell pepper
1 orange bell pepper
1 package of taco seasoning
1 can of olive oil based cooking spray
1/2 of an avocado
2 TBSP of salsa
1 can of black beans
3 cups of brown rice (to be distributed evenly)

1. Preheat the oven to 350 degrees.
2. Spray the sheet pan with cooking spray to prevent from sticking.
3. Cut the chicken tenderloins into smaller strips and bell peppers into slices.
4. Spread the chicken and bell peppers evenly across the sheet pan and sprinkle taco seasoning evenly over them.
5. Cook in the oven for 25-30 minutes (depending on your oven).
6. While the chicken and bell peppers are in the oven, cook your brown rice and prep your bowls or plates with black beans (or another side of your choice).
7. When the chicken and bell peppers are finished, plate all of your ingredients together and add salsa and avocado.
