Pizza in a Pinch

Okay, so I had something else planned for today's post, but after I posted this finished product on Snapchat and Instagram stories and had a couple of people ask about the recipe I decided to fast track it for today so everyone could enjoy this delicious and insanely easy entree. Thanks to an idea from Chaneya, I've decided to turn this recipe into a series centered around quick and easy recipes for the nights when you really don't feel like cooking.

I don't make extravagant dinners every night of the week. Between my full time job, the blog, and making sure I get to the gym 4 nights out of the week, I live for any recipe that makes my weeknight dinner simple and super quick.  When I saw Gwyneth Paltrow's, It's All Easy, cookbook at Barnes & Noble I made a note to add it to my Christmas list. This cook book is a lifesaver as it is full of recipes that take less than 30 minutes and are WAY better for you than take out. This recipe took me 25 minutes from start to finish. No joke. All you need for is pita bread, pasta sauce, and your favorite pizza toppings. Before you know it you'll have your new favorite dinner recipe. Check out the entire recipe below!

Sliced pita bread (2-4 slices depending on how many pizzas you want to make)
Pasta sauce
Mozzarella cheese
Toppings of your choice; I chose mushrooms and green peppers.


  1. Preheat your oven to 450 degrees.
  2. Place pita bread on baking sheet and into the oven for 10 minutes to make them crispy.
  3. Take the pita bread out and layer on your toppings.
  4. Put the pizzas back in the oven to cook for another 10 minutes.
  5. Serve and enjoy!
