Last Minute Christmas Cookie Cake

If you're on hunt for an easy dessert to take to a Christmas gathering or, OH SHOOT!, you haven't made anything to leave for Santa Sunday night then I have an easy and delicious fix. I made this chocolate chip and M&M cookie cake to include in my Christmas cookie tins last week and it went off like a hit! It puts a delicious spin on a traditional cookie cake by adding M&M's as a pleasant surprise.

Now full disclosure, I messed up the recipe just a little bit. However, it worked out in my favor and, I think my recipients can agree, made the dessert even better! The recipe called for flour, obviously. I did not realize the flour I had in my pantry was self-rising as opposed to all purpose. Thus, what was intended to be a cookie bar turned into a cookie cake. But cakes are better than bars so it's fine! Haha Check out the recipe below!

Ingredients
2 sticks of butter, at room temperature
1 cup of sugar
1 cup golden brown sugar
3 large eggs
1 1/2 teaspoons of pure vanilla extract
3 cups all-purpose or self-rising flour
3/4 teaspoon baking soda
3/4 teaspoon salt
1 1/2 cups Christmas M&M's plus more for topping
1 cup chocolate chips, plus more for topping
Directions
1. Preheat oven to 350 degrees.
2. Line a 9x13 baking dish with foil, leave some overhang to make removal easier.
3. Spray foil generously with nonstick cooking spray.
4. Mix butter, granulated sugar, and brown sugar together until fluffy in bowl using hand mixer.
5. Add in eggs and vanilla extract, flour, baking soda and salt and mix until combined.
6. Add M&M's and chocolate chips and give a final stir.
7. Transfer cookie dough to prepared baking dish.
8. Sprinkle additional M&M'S and chocolate chips on top of cookie dough.
9. Bake 35 to 40 minutes on oven rack in lower third of oven to prevent over browning.
10. Let cool completely and cut.
